Here is a real summer type salad for the barbeque

This Waldorf Salad coleslaw recipe is made with thinly sliced red cabbage and red onions. Crushed pecans and sunflower seeds give it a nice nutty flavor. Apples and grapes add to the familiar Waldorf salad taste.

Dressing is lemon juice, mayonnaise, freshly cracked pepper and sea salt.

We have quite a few bacon recipes because we are very fortunate to have a great organic bacon supplier that treats the animals very nicely and offers us many custom cuts.

If you have a traditional “Proper English Breakfast” in Ireland, Scotland or Great Britain you’ll be served a rasher of bacon that’s also cut from the pork loin. However, unlike round-in-shape “Canadian back bacon” or pea meal bacon, it will also include a streaky piece of regular fatty bacon extending from the loin, which gives this bacon an elongated shape. This type of bacon is wet cured in brine and matured and often fairly thickly sliced. One well-known type is Scottish Ayrshire bacon, which is also made in other countries, including Canada.

In her spare time, she is active in a European genealogy association, translating old handwritten German Fonts from antique church records. She has also researched and written a large family Genealogy History of the von Schellwitz aristocratic family.

Alaskan Cruise Ships at Ogden Point Victoria BC

Victoria’s Ogden Point is Canada’s busiest Alaskan Cruise Ship port of call.

Our Gingerbread Cottage Bed and Breakfast is located just steps away from the Dallas Road Seawall, Victoria Breakwater Promenade and Cruise Ships Ogden Point. Ogden Point is “Alaskan cruise ship central” for Canada! We think it the most fun spot in downtown Victoria.

According to the Greater Victoria Harbour Authority “Ogden Point has four deep-sea berths. All of them have excellent approaches, depths, decks and mooring. Pier A offers two berths, 1,000 feet and 800 feet, with a 100,000 square foot warehouse. Two berths at Pier B have been extended to 1,040 feet with the installation of a mooring dolphin.”

Cabbage Recipes and  Sauerkraut Cookbook

Sauerkraut has been home-made for centuries, if not thousands of years. My family has certainly made this sauerkraut recipe for centuries in Transylvania and I have made Sauerkraut with my mother and grand mother, who taught me how.

The shredded cabbage recipes needs to be compressed in the crock pot in order to release the juices and to better start the fermentation process. The more pressure is applied to the cabbage, the more the cell structure of the cabbage is destroyed, releasing the fermentable juices and this produces Sauerkraut in about 2 – 3 weeks.

Traditionally this was ALWAYS most effectively done in large oak barrels or crock pots and ALWAYS by stepping on the shredded cabbage with VERY WELL SCRUBBED AND WASHED BARE FEET. Also grapes for wine making used to be crushed the same way by steeping on them with bare feet. This makes fantastic Sauerkraut! You can NEVER apply the same pressure by just pressing the cabbage down with your fists!

If you don’t use this method, you have to add quite a bit of lightly salted water, which waters the juice down and the cabbage tends to rot and you get “rotten cabbage tea” rather than fermented Sauerkraut.

Actually in autumn there were special get-together occasions for the young people for the purpose of punching down the cabbage for Sauerkraut or the grapes for wine making.

I also understand that our cooking and preparing food today has become very sterile.

To accommodate all of you passionate lovers of sauerkraut, who are hesitant of using their bare feet, just cover your feet by stepping into a large food grade plastic bag (freezer bags are food grade), put an elastic around the bag to hold it to your ankles and then punch your Sauerkraut down in a large crock pot, just as you see in the video.

Eating sauerkraut brings friendly bacteria to your stomach and intestines.
For easier digestion it is a good idea to eat some raw sauerkraut before a meal. For this reason it is also important to — USE VERY GOOD SALT, LIKE HIMALAYA SEA SALT OR MALDON SALT OR ANY GOOD SEA SALT. Sea salt contains important minerals and is alkaline, as opposed to regular salt, which has the minerals removed and is processed.
In order to get the best benefit from naturally fermented Sauerkraut, you should therefore also use the best sea salt available.

Ham and 3 Cheese Omelette with Latkes Potato Pancakes

Latkes Potato Pancakes Recipe

about 1 pound raw grated potatoes
1/2 raw grated onion
1 garlic clove crushed
1 egg
salt and pepper to taste
marjoram
chopped parsley
green onions chopped
stir together in a bowl
add enough Maza meal or regular flour to hold mixture together when frying
heat 1/2 inch oil in skillet
lay large spoonfuls of potato mixture in the hot oil.
gently fry on both sides
serve with a dollop of sour cream and a sprinkling of chopped chives

Try all our omelette fillings and toppings at the Gingerbread Cottage B&B. we use only free run farm fresh eggs from the Happiest of Happy Chickens from local organic farmers in the Saanich Peninsula.

The best omelette fillings and any preparations we do are always made with the freshest local products we can obtain through our many contacts in the Victoria farming and fishing communities.

  • As a child, Vanessa was a real life “Heidi” living in the Eschen Villa on the clean, cold alpine Attersee Lake, in Seewalchen Austria, 50 KM East of Salzburg. 
  • Vanessa’s birthplace was located 50 meters from her Godmother’s famous Paulick Villa – the Summer Playground to Vienna’s Elite Art nouveau Community including Gustav Klimt, Egon Schiele, Richard Teschner and Friedrich Paulick at the turn of the 19th century.
  • In fact, the aunt of Vanessa’s Godmother, Gertrude Floege, was the famous fashion designer Emelia Floege – life companion of Gustav Klimt who frequently painted at the Paulick Villa..
  • Also the last Countess Maria dei Medici, who lived adjacent to the Eschen Villa hand wrote a poem for Vanessa as a child… Not many People can say that!
  • Vanessa got her teaching Degree in Salzburg but her real love and talents were for cooking.. 
  • Coming to Vancouver Island via Culture City itself – Salzburg Austria – A true Austrian,Vanessa has pure Mozart flowing through her veins and a delicious piping hot Austrian ApfelStrudel in the Oven for her many guests!
  • Vanessa and her 70’s husband owned and operated the Austrian Chalet, an 80 room hotel with 3 Restaurants in Campbell River BC
  • Vanessa spent many years as Victoria BC’s busiest and most Versatile Culinary Instructor from her Veni. Vidi, Coxi Cooking School, and operating her busy “Vienna Catering” Business
  • Author of 8 Cookbooks, Vanessa also wrote a food Column, had her own TV cooking show and did food styling for other local authors.

Vanessa makes all her guests feel like Austrian Royalty in her c. 1905 Victorian “Arts and Crafts Heritage Home” with Cozy Themed rooms and Elegant 3 Course Breakfasts in her “Bavarian  Gasthaus” Style Breakfast Room

The Gingerbread Cottage is a 1905 Heritage Victorian Arts and Crafts home in pretty well original condition with most of the original hardwood floors and Windows. It is well zoned for vacation rentals as each guest area has access through a private stairwell just inside the front doors.

Vanessa hails from Salzburg Austria – an experienced hotelier and restaurateur welcomes you to a oceanside vacation in beautiful downtown Victoria BC. Vanessa is an excellent chef and has had a catering company, local Tv cooking shows and food presentation shoots for magazines. She also was Victoria’s busiest culinary instructor.

Dean is from Swift Current Saskatchewan is an experienced tradesman and contractor. He is a past member of Toastmaster clubs and will happily give you some ‘table topics’ at breakfast, also has a lot of videos on YouTube with views approaching 4,000,000.

Every morning we offer our guests a large wholesome breakfast with Vanessa’s Homemade Honey Granola, fresh fruit and fresh baking on the buffet. Served in our Bavarian Gasthaus style breakfast room. Followed by Cooked to Order Main Course Omelettes

We make sure you are cozy with our Plush Down Feather Duvets and crisp ironed sheets and bed linens. All in our quiet and private guest rooms.

Salzburg born Chef Vanessa von Schellwitz combines her talent with salmon recipes  with tasty local ingredients, Omega 3 Free run eggs, wild caught cold smoked sockeye salmon, local Yukon Gold potatoes sautéed in butter, olive oil and garlic butter and topped with Vanessa’s own Herbes de Provence. The lox omelette uses a cream cheese base and eggs are whipped to provide a fluffy consistency. The eggs themselves come from the happy, happy chickens at one of several local suppliers from the pastoral settings of Saanich.

Our guests love our seafood omelettes and lox omelette and other creative breakfast dishes.

You will want to try this experience next time you are in Lovely Victoria BC. Make sure to book ahead as this year will be very busy dud to low Canadian dollar..

Cold Smoked Lox Omelette with Salicornia – Sea Asparagus

Vanessa serves a cooked to order breakfast to her fortunate Bed and Breakfast guests every day. The choices usually include a breakfast meat dish like Canadian Bacon and Duck Eggs, or a Vegetarian Omelette with Pesto and Goat Feta Cheese or the seafood specials.

She also serves a full starter buffet with her home-baked Molasses Granola, fresh-baked Squash Rolls, fruit and cheese trays, breakfast baking sweets and Orange Juice, Tea or coffee.

As everything is made in-house, Vanessa also caters to special diets such as vegetarian, vegan, gluten or dairy free. If you have a specific dietary requirement we can usually accommodate any requirement if you let us know ahead of time. Vanessa loves to be creative and uses mostly fresh herbs from our own back yard herb Garden.
