Worked better than the traditional #mandolinslicer
Used #coarse #koshersalt massaged the cabbage by stepping in with both feet covered in heavy plastic bags to get the Juices flowing. Fluffed it with both hands to give it space. Topped off with lightly salted cold water. Covered with a plate. Placed my heavy stone mortar (wrapped in plastic wrap) on top
Covered with a kitchen towel and a large lid.
Should be done in about 2 to 3 weeks.
